Brussels Sprouts Salad

Brussels sprouts are an excellent source of cancer-fighting DIM.  This is a great one-dish meal – even if you are missing a few of these ingredients!

Ingredients:
1 lb Brussels sprouts
1 avocado, sliced in chunks
2 tbsp coconut oil
2 tsp Apple Cider Vinegar
1/2 jar of Hearts of Palm, sliced
1 cup red cabbage, finely sliced
1 cup of chopped cauliflower
1/2 of a red bell pepper, sliced, or use cherry tomatoes, sliced in half
1/2 cup pumpkin seeds 
1/2 cup quinoa, cooked
Sea salt & black pepper, to taste

Instructions:
Rinse the Brussels sprouts well and trim off the bottoms. Peel off the outer leaves and cut the harder parts in half. Place the Brussels sprouts on a baking sheet along with the coconut oil.  Roast at 400 degrees about 10-12 minutes.
Combine all ingredients except the avocado in a large bowl, and stir.  Add the avocado last, and season with salt & pepper to taste.
